This is HoHo Cake.  No, not Santa Claus "HoHo Merry Christmas" cake...  It is a copycat of the Hostess snack cake  HoHo's!  And it is Ha Ha HEAVEN : )  This is a simple chocolate cake box mix, with two different homemade frostings to layer on top! This is the one I was telling you would 'knock your socks off'..  and it did mine.. and my Moms... and my sisters. We LOVED it !

Recipe By: How Sweet Eats

1 box (18 oz) Chocolate cake mix
(eggs, oil and water the cake mix calls for)


1 cup Butter, softened
1/2 cup Milk
1 tablespoon Vanilla extract
3 cups Powdered Sugar
1/4 teaspoon Salt


1/2 cup Butter, softened
1 teaspoon Vanilla extract
3/4 cup Cocoa
3 cups Powdered Sugar
8 tablespoons Water,  Adding one at a time

Preheat oven to 350 degrees. Grease and flour a jelly roll pan.  Prepare cake mix according to its package directions. Pour into the greased jelly roll pan and spread around until its even.  Bake for 15-20 minutes. Start checking for doneness after 15 minutes.
 Let cool 30 minutes and then start mixing middle layer.

Middle Layer:  With a hand mixer, mix the butter and milk together until combined. Add in the vanilla and salt. Mix again. Slowly add in the powdered sugar one cup at a time. Beat on medium speed for 5-10 minutes or until creamy.  ( I beat mine for 10 minutes)
Spread evenly over the cake. Then place in freezer while you mix top layer.

Top Layer:  Beat the butter and vanilla together until creamy. Slowly beat in the cocoa on low speed. Once cocoa is thoroughly mixed in, start slowly adding in the water 1 tablespoon at a time and the powdered sugar, one cup a time. Mix together until you get a creamy frosting. (You may not need to use all of the water)

Spread the Top Layer evenly over the middle layer. Place cake in fridge and let chill before eating! Slice and serve : ) 


Caramel Popcorn

Christmas Eve is finally here! I love this day. Maybe a little bit more than Christmas day. Today is full of excitement and anticipation for the night ahead! I am baking like crazy today. I will be posting the goodies next week for you : )  My girls are so excited they are running around my house like wild animals, and asking me every 5 minutes, "How much longer until Santa comes?" .. "How much longer until we get ready for the party?" lol  I miss being a kid! I know how magical this time is for them!

I saw this Caramel Popcorn on MandysRecipeBox and thought it looked delicious and something yummy to take to co workers and friends! It turned out just how it looks! DELISH :) Well, I better get back to baking and wrapping, and hearing the kids ask me the same questions over and over and over again...  But before I go I want to wish you all a very MERRY CHRISTMAS!

Caramel Popcorn
2 cups brown sugar
1 cup light corn syrup
1 teaspoon vanilla
1 stick butter (1/2 cup)
1 can sweetened condensed milk
3 bags (3 oz bags, plain microwave popcorn, popped)

Place the popped popcorn in a large bowl. Try and dig out leftover kernals at the bottom and throw them away.
Place the brown sugar, corn syrup and butter in a saucepan and cook over medium heat. Stir until the butter melts. Add vanilla and stir. Slowly add in the condensed milk and mix well together. Continue to stir and cook until it reaches the softball stage.( Test this by getting a mug and fill it with cold water. Drop some of the caramel in. If it forms a ball and doesnt turn into a soupy mess, than its ready )
Pour caramel over the popcorn. Stir gently to coat all of the popcorn. ( Be very careful because the caramel is very HOT)  Leave in the bowl to eat or shape into balls! YUM

S'mores Fudge

Happy Holidays everyone! Im getting so excited for Christmas...only 4 days away!! Wow! I still have a TON of wrapping to do but I thought I needed to post this awesome fudge first :)  I found it HERE at MandysRecipeBox blog (one of my many faves!) When I saw this, I printed it off immediately and made it last night! It is such an easy recipe. Only 4 simple ingredients is all you need to whip up this yummy stuff! Heres how you do it:


12 oz bag Milk Chocolate chips
1 can Sweetened Condensed Milk
3 Graham Crackers
1 cup Mini Marshmellows

Melt the chocolate chips and milk over medium-low heat in a large pot. Stir until chips are all melted. Remove from heat. Break the graham cracker into small pieces and gently stir into the chocolate. Stir in the marshmellows last. Pour into a generously buttered 8x8 square baking dish. Cover and Refridgerate for 1 hour!

BBQ Chicken & Bacon Pizza

 BBQ Chicken Pizza is my favorite kind of pizza. Hands down. My hubby and kids love it too, so there are always a bunch of happy faces in our house, whenever I make it!

   This pizza dough recipe is the bomb diggity. It comes from thee amazing Ree Drummond (Pioneer Woman). It is by far the best homemade dough I've ever eaten, and it is the only kind I'll make. I am officially hooked!

   My kids love it when I make the dough, roll it out into their own personal size, and let them put on their own toppings! They have a blast getting to create their own pizza :)  If you haven't made your own pizza at home, than I suggest you do asap. There's just nothing like it!


PIZZA DOUGH: (Makes 2 crusts)

1 teaspoon Active Dry or Instant Yeast
1 1/2 cups warm water
4 cups All-purpose flour
1 teaspoon Kosher salt
1/3 cup Extra Virgin Olive Oil

TOPPINGS: (Enough for 1 pizza)

1 large boneless, skinless Chicken breast, cooked and shredded
4 slices of cooked Bacon, chopped
1 cup, plus 3 Tablespoons Barbecue Sauce, divided
3 1/2 cups shredded Mozzarella cheese
1/4 cup thinly sliced Red Onion
3 Tablespoons fresh Cilantro, chopped

FOR PIZZA DOUGH:  Sprinkle yeast over the 1 1/2 cups warm water. Set aside.
In a large bowl combine flour and salt. Drizzle in olive oil and stir until combined with flour. Next, pour in yeast/water mixture and mix until combined. (You can do this by hand or with a stand mixer, with paddle attachment, on low speed)

Coat a separate mixing bowl with a light drizzle of olive oil, and form dough into a ball. Turn to coat dough in oil, then cover the bowl with plastic wrap. Let dough sit, and double in size for at least an hour or so.

Take only HALF of dough, and press into a 16 inch pizza pan or cookie sheet. (Dough will be thin)
Top with your favorite pizza toppings. FOR BBQ CHICKEN PIZZA, see below:

*For other half of dough, use for a 2nd pizza or cover tightly with plastic wrap, and store in the refrigerator for up to 4 days.

TOPPINGS for BBQ CHICKEN PIZZA:  Preheat oven to 425 degrees. Spread 1 cup of the barbecue sauce over the pizza dough. Sprinkle 3 cups of the mozzarella cheese on top. Toss the cooked, shredded chicken in the 3 tbs of barbecue sauce. Sprinkle the chicken, bacon and onion over the cheese. Top with remaining 1/2 cup of mozzarella cheese.
 Bake for 10 minutes. Remove pizza from oven, sprinkle with cilantro. Return to oven and bake 5 more minutes or until crust is golden brown and cheese is bubble. Let stand 5 minutes.
Slice with pizza cutter and serve! :)


Dad's Tacos

In my expert opinion (lol... not)  I believe that these are thee greatest Tacos in all the land! Seriously. My Dad has been making these since I was a little girl. They are so delicious, and so easy to make. The special ingredient that really makes these tacos so great is Cheese Whiz! Yes, I said Cheese Whiz! It is essential when making these bad boys!
Sometimes when Dad would make these we would have 'Taco eating contests!' To see who could eat the most tacos. I think it was always a pretty close race between myself and my step-brother Brad. I think the most I ever ate was like 6 or 7 at one time.. (GASP!) ha   and then I would be so full I couldn't breathe. Ha! I always so excited when he would make these Tacos for us, and now as an adult, I make them for my hubby and girls. They love 'em too!

1 lb Ground Beef
1 small yellow Onion, chopped
1 jar Cheese Whiz
10 count package of Corn Tortillas
Oil for frying
Taco toppings (lettuce, salsa, sour cream, etc)

Heat oil in either a small skillet or deep fryer on medium-low heat. I usually use a small skillet and fill it halfway with oil. (You dont need a lot of oil for these. Maybe 1 to 1 1/2 cups at most)

Cook the ground beef and onion in a large skillet on medium-high heat. Once browned, drain grease.
Fry the tortillas in the oil, about 30 seconds on each side.
Lay the fried tortillas onto a plate with paper towels to soak up the grease.
Spread some Cheese Whiz (however much you like) onto the tortilla and then top with the ground beef and all your favorite taco toppings!!!   (Makes 10 Tacos)



Candy Cane KISS Blondies!

Holy cow it has been a CRAZY BUSY week for us! Between Christmas shopping, family pictures to get ready for and um... my um... *cough*.. 30th birthday..*cough*   This is the first chance I have had to post a recipe!!  Even though it was a busy and hectic week, it really was a good one! I still cant believe I am 30! I didnt think it was going to affect me the way it did. I was very emotional that day. I know it sounds dumb, but I was.  My 20's were awesome! I really accomplished a lot and did a lot of fun things (and dumb things) in my 20's.  I decided after sulking for half of the day, and after my husband showed up at our house that night with a giant chocolate cake in one hand and a huge birthday gift bag in the other ( inside was a proffesional knife set I've been wanting for a very long time!) that I was going to stop being a baby and embrace my 30's!!! So I am happy and proud to say I am going to make my 30's way better than my 20's ever thought of being!!! :)  Yay for me! lol
Anywho...  On with the recipe..There are so many cute holiday hershey kisses right now, and these Candy Cane ones are my favorite! I purchased a bag and thought and thought about what I could do with them. This is what I came up with. I chopped them up and threw them into a delicious blondie batter. They turned out awesome :) I am such a huge Blondie fan and I am sooo happy with how these turned out! I think that the Maple butter sauce drenched over the ice cream is a MUST with these babies!

1 1/2 sticks butter
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 1/2 cups golden brown sugar
2 eggs
1 tsp vanilla
1 cup chopped  Candy Cane Hershey Kisses

Maple Butter Sauce

1 stick butter
3/4 cup Pure Maple Syrup
3/4 cup brown sugar

Preheat oven to 350 degrees. Grease an 8x8 square glass baking dish.
Melt the butter in a large saucepan over medium heat. Then add the brown sugar and whisk until sugar is dissolved. (About 5 minutes) Set aside and let cool down a little.

In a medium bowl stir together the flour, salt and baking powder. Set aside.

In a large bowl, beat the 2 eggs and vanilla together. Slowly whisk in the butter/brown sugar mixture. Constantly whisking. Then whisk in the flour mixture just until combined. Stir in the candy cane kisses. Pour immediately into the baking dish and Bake for 25-30 minutes. Do the toothpick test to make sure it is done.

MAPLE BUTTER SAUCE:  Melt the butter and maple syrup in a large saucepan over low heat until butter is melted. Then stir in the brown sugar and continue to stir until sugar is dissolved.

Cut the blondies into squares. Place one square onto a plate or bowl. Place a scoop of vanilla ice cream on top and then drench with the maple butter sauce!!!   Mmmmmmmm   :)


Ranch Chicken

I wish I could take the credit for this delicious recipe! It is one of my favorites! I honestly dont even know who to give the credit to because I dont know where it originally came from. My little sis Lindsey told me about it a couple of years ago and I think a friend of hers gave it to her. It is crispy, full of flavor and baked, not fried! It is made up of only 3 ingredients: crushed Corn flakes, grated Parmesan cheese and of course, Ranch dressing! YUM :)   Heres how ya do it:


3-4 chicken breasts
1 packet Ranch dressing seasoning mix
1 cup crushed Corn flakes
1/2 cup grated Parmesan cheese
4 TBS butter, melted

Preheat oven to 400 degrees.  Spray a 9x13 glass baking dish with cooking spray.  
Combine the Ranch seasoning mix, the crushed Corn flakes and Parmesan cheese into a large freezer baggie.
Shake well to mix all together.
Dip each chicken breast into the melted butter, and then drop into the baggie. Seal the bag shut and then shake well to coat with the seasoning mix. After well coated lay chicken into the baking dish. Repeat with all of the chicken.
Once all chicken has been coated, sprinkle the remaining seasoning mixture onto the tops of chicken.
Bake for 45 - 50 minutes. (Towards the last 15 minutes of cooking you may need to lay a piece of foil over the top to prevent from burning.)

Southwest Lasagna

         Can I just first start by saying how much I am loving being a foodie blogger! It really is turning into a fun hobby! I have been meeting so many new people, like myself, who love to cook and find new recipes to try out! There are so many food blogs it's unbelievable! I have a lot to learn from all these amazing bloggers out there.. I'm excited!
         As for this delicious recipe, my Mom has been making this for as long as I can remember. It was one of my favorite meals she would make us growing up! She would always serve it with corn and garlic bread, and that is what I serve with it too when I make it. I am dissappointed in how my picture of it turned out though. The pics look great when I take them with my camera and after I edit them, but it seems like once I post it on blogger, they look terrible! Whats up with that? Anyone else have that problem or is it just me?
        Well enough about my problems... ha   Here is this scrumptious, easy recipe:


1 lb Ground beef
1 small Onion, chopped
3 cans (10 oz each) Tomatoe soup
1 cup water
1 tsp Garlic salt
2 tbs Taco seasoning
3 cups shredded Colby-Monterey Jack cheese
9 Lasagna Noodles

             Preheat oven to 400 degrees.  Bring the lasagna noodles to a boil in a large pot and cook according to package directions.
             In a large skillet, Cook the ground beef and onion together. Once cooked thoroughly, drain the grease.
             In a large bowl combine the 3 soups, water, garlic salt and taco seasoning. Mix well. Once beef is cooked and drained of grease add to the bowl. Mix well. 
             Spray a 9x13 baking dish with cooking spray. Lay out 4 of the lasagna noodles, slightly overlapping. Pour half of the soup mixture on top, spreading evenly. Sprinkle one cup of cheese over the meat mixture.
             Repeat again with 4 lasagna noodles, and then spread the last half of mixture on top. Sprinkle the last two cups of cheese on top. Bake for 45 minutes or until Hot and Bubbly! Let cool 10 minutes before cutting into.  Enjoy :)
